Pecan Crusted Tilapia

This came from a restaurant I’ve been enjoying since I was a child. It is, thank goodness, still going strong. Their orange rolls are legendary. This recipe was given to me by their chef. Nice guy.

Pecan Crusted Tilapia

Preheat oven to 400°

1. Coat tilapia in butter
2. Bread fish in mixture of 50/50 pecan meal and Panko bread crumbs. (We grind up pecans in a blender with Zatarain’s corn flour).
3. Bake for 15-20 minutes or until tilapia is cooked through.

For Sauce:
1. Mix broken pecan halves with brown sugar and Kahlua liqueur.
2. Heat in pan to a simmer
3. Carefully light sauce to flambé and burn off alcohol taste.

Serve:
Put tilapia in warmed plate, over rice, and pour on pecan sauce.
Enjoy.
